Cinnamon Chocolate Coffee Cake

Ingredients

 
  • 8 eggs

  • 1/2 cup melted coconut oil

  • 1 cup coconut sugar

  • 1/2 cup maple syrup

  • 1 teaspoon vanilla

  • pinch of salt

  • 1 teaspoon baking powder

  • 1/2 cup coffee

  • 1 teaspoon cinnamon

  • 1 cup cocoa

  • 1 cup gluten free flour

Procedure

  1. Preheat the oven to 350°F and line a square 8 x 8 pan with parchment paper.

  2. Add all ingredients to a large mixing bowl and mix well combined. The finished product should be thick and pretty moist.

  3. Scrape dough into the parchment lined pan and smooth into an even layer with your hands or a spatula.

  4. Bake for 18-20 minutes. The edges of the brownie should pull from the pan and the surface should start to split.

  5. Remove from the oven and allow to cool completely.
