Orange Coconut Date Bars

Ingredients

 
  • 2 cups of dates

  • 1 Orange

  • 1/2 cup unsweetened coconut

  • pinch of salt

  • 1 teaspoon vanilla

  • 1 cup oats

  • 1/2 cup coconut oil

Procedure

  1. Preheat the oven to 350°F and line a square 8 x 8 pan with parchment paper.

  2. Soak dates and coconut in hot water for at least 20 minutes.

  3. Add 1 cup of oats and pinch of salt to food processor and blend until flour. Set aside in another bowl.

  4. Drain dates and coconut and add to food processor.

  5. Peal orange with a sharf carving knife to get all the peal.

  6. Add dates, coconut, orange peel, and vanilla to food processor. Blend on high speed.

  7. Slowly add in melted coconut oil. Let mix for at least 10 minutes to imulsify the dates and coconut and extract the orange essential oild.

  8. Once done add date mixture to oats and salt. It should be sticky.

  9. Place into pan and bake for 10 minutes.

  10. Remove from the oven and allow to cool completely.
