Savory Garlic & Chive Buckwheat Pancakes topped with Smoked Salmon & Greek Yogurt

Ingredients

 

Dressing:

  • 2 Tbsp mustard powder

  • 1 Tbsp yellow mustard

  • 1/3 cup olive oil

  • Juice from 1 Lemon

  • 1 tsp Black Pepper

  • 1 tsp honey or agave

Pancakes and Toppings:

  • 2-1/4 cups buckwheat flour

  • 6 eggs

  • 1/4 cup chopped chives

  • 2 tsp salt

  • 1 Tbl chopped garlic

  • 1/2 tsp garlic powder

  • 1/4 cup sugar

  • 2 tsp baking soda

  • 2 cups milk (or milk alternative)

  • Precooked Smoked Salmon

  • Salad greens (any kind)

  • Greek yogurt (optional)

Procedure

  1. Dressing:

    Add ingredients to a bowl and stir using a whisk.

    Add additional seasonings to taste.

    In a large bowl combine greens and dressing. Toss to mix.

  2. Pancakes:

    Combine and mix all dry ingredients in a bowl.

    While whisking add in wet ingredients until well combined.

  3. Cooking Instructions:

    Using any frying pan turn stove top on to medium heat and add a small 1/4 cup of batter to the pan.

    Once bubbles have formed, flip pancake. Pancakes should be golden brown.

  4. To Serve:

    Top pancake with small bunch of mixed greens

    Place a few slices of smoked salmon on top of greens.

    Place another pancake on top of salmon

    Top pancake with 2 Tbl greek yogurt.
